I know this sounds like bragging, and it is. Seriously, dudes, this is pure corn awesomeness. Lip-smackin’ corn love, I swear. Try this corn, and you’ll crave it fortnightly*, mark my words.
I have to admit that usually, when it comes to sweet corn, I am a purist. When the dog days of summer howl, there’s nothing better than tucking into a few ears of sweet corn, adorned with a smattering of butter and a sprinkle of salt.
But now? It’s the beginning of June–the days of corn-lusciousness are a few weeks away. At this juncture, corn is decent, not yet swoon-worthy. June corn can benefit from a little razzle dazzle.
Not that this recipe is fussy–if you look at it, you’ll see that it’s drop-dead simple. Summertime calls for drop-dead simple recipes, don’t you think? All you need to do is fire up the grill, toss on some corn, heat up this delectable glaze, and you’ll be on your way to Corn Nirvana.
Well, okay, I lied–you have to shuck the corn, which is a pain in the butkus. I hate shucking corn. Is it just me? I’m not even sure why I hate it. Does anyone have any shucking secrets they can share with me? Because I’m so in love with this recipe, I’m going to be shucking all summer long. Truly.
Chipotle-Lime Glazed Corn
serves 6
adapted from weber’s Way to Grill
Glaze:
1/3 cup low-sodium chicken broth
4 tablespoons butter
1 tablespoon sugar
1 teaspoon freshly grated lime zest
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground pepper
1/2 teaspoon chipotle puree**
6 ears fresh corn
Prepare your grill for direct cooking over medium heat.
Shuck the corn and remove all silk. If you like, you can pull the husks back, but leave them attached at the stem end so they make a nifty little handle.
Grill the corn over direct medium heat, with the lid closed as much as possible, for 10 to 15 minutes, turning occasionally.
Meanwhile, combine glaze ingredients in a medium saucepan. Bring to a boil; continue to cook over medium high heat (boiling) for about 5 minutes or until glaze thickens.
Brush grilled corn with glaze and enjoy.

I love corn on the grill! This is a sexy recipe for summer corn, no advise for getting the pesky husks off but I will be working on it as I try this recipe.
My all time favorite way to eat corn is to melt butter, add lime juice and chili powder and then roll the grilled corn in it. Your way sounds heavenly too! Grilled corn is the stuff summer is made of!
