Ginger-Peach Cocktail for a Long Weekend

Greetings, Readers!

Anyone have cookouts planned for the long weekend? Is everyone ready to say goodbye to summer, or are some of you in total mourning mode?

Personally, I’m somewhere in between. I do love autumn–it’s by far my favorite season–but I also am well aware that those changing leaves and cool nights mean the inevitable: winter is on the horizon.

Ah, Jesus, I can’t even think about that right now. Just thinking about slick roads and freezy fingers and shoveling our huge-ass driveway makes me want to run far, far away. Or reach for a stiff cocktail.

This weekend, I have a few peach-centered libations on the menu, since we’ve got those Palisade beauties hanging around. This one’s the first one on the docket–a gingery, peachy refresher that’s perfect for a warm afternoon or evening.

My Daddy-o will definitely need one (or two) of these babies, since he’s just suffered through gum surgery. Poor guy! Normally, I’d be firing up the grill for him this weekend, but he is strictly forbidden to eat anything but mushy stuff. So just for him, I’m whipping up my nemesis…meatloaf. Gah! I must really love that rascal. I’m trying a new version that hopefully will not seem quite so vile to my tender tastebuds. I’ll keep y’all posted on how that goes.

Maybe after a few of these drinks, I won’t even mind?

Gingery Peach Cooler

serves 4

from Real Simple magazine

3 cups ginger ale

1/2 cup peach nectar, such as Kerns

2 peaches, thinly sliced

1 tablespoon fresh ginger, grated

4 ounces gin

Mix ingredients together and serve over ice.

*PS: to my beautiful readers who don’t indulge in alcohol, this recipe is perfectly delicious without the gin.
