Backside BFF:Peter Rabbit Salad Dressing

This recipe caught my eye for two reasons: 1. Carrot juice? In a salad dressing? That’s freaking weird. I like weird. 2. This salad dressing only has a teaspoon of oil in it.

That’s right, friends and neighbors. One measly teaspoon. Now if you’ve ever watched Ina or Tyler Florence or god forbid, Paula Deen whip up a salad dressing on The Food Network, you know that there’s usually at least 1/2 cup of oil in a salad dressing recipe.

This recipe yields 2 cups of dressing. In short? This salad dressing is your butt’s best friend.

I don’t know about you, but my ass could use an ally. Lately KitchyWitchy’s been slacking at the gym and has rediscovered Twizzlers. It’s a little ugly, folks.

I didn’t follow the recipe for the actual salad that went with the dressing, because that was a little *too* weird for me. The salad had all kinds of sprouts and shoots in it and looked…well…disturbingly like hair.

So I created my own. I had leftover rotisserie chicken (I always seem to have leftover rotisserie chicken), and some greens, and so I rummaged around for some other goodies.

With the dressing containing sesame oil and Sriracha ( hot sauce), I thought it had kind of an Asian Vibe going, so I sliced up some celery and scallions, threw in some carrots and, at the last minute, toasted up some slivered almonds for thrills. I mean, hey, the salad is virtuous enough; I think some nut-love is justified here. If you’re really feeling edgy, you could probably put in some of those chow mein noodle thingys instead and still feel unashamed.

I liked the contrast of the leafy greens and the crunchy celery; if I’d had bean sprouts or water chestnuts, I bet they’d be good in this, too. Honestly, you can mess around with any number of ingredients–mandarin oranges, snow peas, mushrooms, jicama…whatever. Just keep the Asian flair and you’ll be all right.

The dressing definitely has a kick–so if you fear the spice, start with half the amount of Sriracha and adjust according to taste.

I made this salad for two people for lunch, so I have plenty of dressing left over. I liked it; it’s quite light and refreshing. Plus, carrot juice? Healthy stuff! I can justify a few Twizzlers if I eat this for lunch, don’t you think?

Spicy Carrot Dressing

from Gourmet Magazine’s favorites 2010

1 pint fresh carrot juice

3 tablespoons fresh lime juice

1 teaspoon Sriracha

1 teaspoon Asian (toasted) sesame oil

1/4 teaspoon kosher salt

a few grinds of fresh pepper

1/8 teaspoon Chinese five-spice powder (my addition)

Mix ingredients together well and toss with any goodies you come up with.

I’ve never considered a hot, spicy salad dressing before. Nor have I ever heard of Sriracha or Chinese five-spice powder…

OK, that really long pause was me contemplating whether or not I want to step outside my comfort zone. Jury is still out. Pass me a Twizzler, please.

This sounds a lot like the delicious carrot ginger salad dressing we bought at WF when I was out visiting. I got a juicer over the summer and will have to give this a try!

Hmmm. Carrot juice without being masked by large amounts of salt (V8) or fruit juice (V8 Fusion)? Not too sure of that one. I do like that it’s spicy, however–certainly a break from the vinegary bite that the husband tends to favor.

And at my house? We never have leftover rotisserie chicken. My family devours it. However, whenever we grill I always have my husband grill chicken breasts for later in the week so this recipe is being printed out right now. AND it’s another reason to use the Chinese Five Spice powder collecting dust (the jar, not the spices) in my pantry. Thanks for expanding my horizens with CFS.

Sounds like a great dressing I love carrot juice add Sriracha and you just can’t go wrong. Ok confession time my twizzler loving friend… mix your bourbon and coke then bite the ends off of a twizzler and use it for a straw! The sweet strawberry goodness infused into your drink! I know that you are making fun of me… but I’ll bet you try it ;~)

OK, the recipe sounds super… although I’ve never heard of Sriracha (or Chinese five-spice powder, for that matter), but I’m willing to bet that my local grocery doesn’t carry it (them).

So where do you find these ingredients? Whole Foods? I love WF, but the closest one is 40 minutes from my house.

Ummmmm ….carrot juice? Are you and my daughter sisters under the skin? She comes home and gets out the vegetable squeezer (who knows what it’s really called but I was frog marched into a store to get one for her years ago….I think with the hope that it would remain on the counter after she left and I would actually use it) and she throws a bunch of veggies in there and out comes this god awful drink. And carrots are a big part of it.
I am turned off.
