I have issues with water. It’s just that, well, I don’t really like it. I can’t even complain that we have funky tasting water, like some states; Colorado water is deemed delicious by anyone who’s ever visited my home.  But whenever I drink water, it sorta tastes like what I last ate. That kind of skeebs me out.

I’ve tried adding lime, lemon, cucumber, little packets of Crystal Light. And that does help, but I still don’t drink enough. I like Pellegrino, but it’s carbonated, so if I drink a lot of it, my stomach starts to resemble a half-inflated balloon, which insults my vanity.

The result of this conundrum? I don’t drink enough liquid during the day. At first blush, this doesn’t seem too bad–I’ve always had a small bladder. Mama used to complain that when I was little, she knew the location of every public bathroom in the state of North Dakota. It was exhausting to be the mother of Little Miss Tinkle.

And as far as this bladder goes, let’s face it: giving birth to two humans hasn’t helped matters.

My constant state of dehydration makes my skin flake and my lips dry and my temples throb at times. I wake up during the night often, parched and fumbling for my water glass.

When I saw this recipe, I knew it was good medicine. It’s  delicious, very refreshing and is a great way to start your day if, like me, you wake up feeling like you ate the Gobi Desert.

Plus, the pretty pink color is a cheery sight in the morning, don’t you think?

Rehydration Smoothie

from O Magazine

serves 1

1 cup watermelon chunks, frozen*

1/2 cup coconut water**

1 1/2 teaspoons fresh lime juice, from 1/2 lime

4 to 5 mint leaves

4 ice cubes

Combine ingredients in a blender and process until smooth. Serve immediately.

*A little hint about freezing watermelon chunks. Chunk the melon fairly small, into about 1/2-inch cubes. Also, freeze the cubes flat, in a single layer (not hucked together in a Ziploc bag like I did). Big hunks of frozen watermelon? Hell on your blender. I seriously thought mine was going to go kaput on me.

**Coconut water is not coconut milk or cream of coconut. It’s water that comes from a young coconut, and it’s becoming hugely popular among the gym-going crowd. Apparently, it’s loaded with potassium and electrolytes, making it the perfect thing to jump-start your body. It can be found in health food stores, but actually, it’s becoming such a “thing” that I was actually able to find it in the juice aisle (near the organic juices) at my neighborhood Kroeger.

Coconut water is my new fav, go to drink. I buy the Vita Coco brand and have considered buying it by the case as the grocery here carries it that way. I love it and they have one that has pomegranate in it that is especially delicious.

It’s funny that you say this, because water is pretty much all I drink. I feel like the more I drink it, the more I want it. (Have you tried that?) Anything else makes me thirsty.

I end up looking a bit crazy at times. When I have coffee, gotta have my water. When I have wine or some other delightful drink, a glass of water rests beside it.

I love it. But it is boring. (Perhaps I am just boring.)

I told Lucas the other day “I have these days where I feel so hungover, but I’m not, obviously…” and he goes “you’re dehydrated, drink water”

I love water and this still looks good :) I think I drink at least 3 nalgiene bottles a day! I’m like a camel with the bladder of a squirrel so I totally can relate to you on that haha

Mama can’t boast too much about knowing the location of EVERY public bathroom in North Dakota! Having lived there for a couple of years and traveled at length for high school choir I too know the locations – all 10 of them;)

mmm- I have made these before without coconut water and with vodka. That probably doesn’t hydrate, though- thanks for the healthier version!

I LOVE coconut water–I feel like it’s genuinely rejuvenating me after a workout and it’s not high in calories. I don’t love watermelon so I’d replace it with fruit I’d like, but overall, a very nice smoothie!

I have heard a lot about coconut water, and I hate to admit it, but I’m all about the changing trends, so I’m on board with this one.
This recipe would suit me fine too, I have such a hard time drinking water. It’s a chore. I have to make bets with my kids to see who can chug a glass the fastest.

Like you, I have issues constantly drinking water…especially since I cannot go to the bathroom throughout the day like normal people because I teach for a living…I imagine that this would taste just heavenly…

Anything with watermelon has to be fabulous! Sounds interesting with the coconut water, but I’d never heard of it. At first I thought you meant cocnut milk under I read further.

Oooh…this DOES look good. I am a big fan of water and that’s pretty much all I drink (outside of my daily java) but I have a lot of coconut water in my fridge now that calls for a recipe so this, Little Miss Tinkle, is perfect!

My BF is all gung-go for the coconut water. That and here Hawaiian girlfriend. I need me some exotic. Can we have these together at a spa? Sounds delicious. Might have to break out the blender!

Isn’t beer hydrating? Wine? This does look delicious and sounds quite tasty. Now that watermelon is available year round, it might become my go to drink. I know where every bathroom is in all the lower 48. When I’m traveling alone, I have a map of every Cracker Barrel. I can stop, use the facilities, shop if I like and feel safe to nap in the parking lot!!

This smoothie looks really good and we always but 5 watermelons a week. I just want to know if it will still taste good without the coconut juice, sadly I’m allergic to coconut :( Thank you for the recipe

I drink water all day long, which means I am in the potty all day long. Which sucks

then I am not hungry. ; )

I can’t stand water, either. Never have. Even when pregnant, I never drank much. I think it gave me heartburn, actually. Either way, I just don’t like it. I drink a lot more soda than I should, though. Which is all just to say, this drink looks yummy.

You’re so creative, LMT! I love the combination of watermelon and coconut water. A new Thai place just opened a block from my house and they serve coconut juice in the shell with the white coconut meat intact so this recipe will be a cinch for me to try.

I used to be a Love Water Person. Now, not so much. What happened? I, like you, love bubbles in my agua. In Spain they called it agua-con-gass. My kids got such a kick out of that and I think that must be when I converted. I put my bubbles in my favorite wine goblet and imbibe all day long.

But this treat is another time when I feel your kitchen witchery at work. My daughter just had her teeth pulled and the instructions specifically say, “Keep hydrated.” Then here you are like magic.

I am going to try this, I am always encouraging myself to drink more water. My fourteen year old is always saying “Mom, you should really have a glass of water” Kids, learn way to much at school. Water just does not taste as good as sweet tea or a coke. Who knows, this might make me give water another chance, and my fourteen year old would be so proud of me. I

I know I should drink a ton of water, and I feel like crap if I don’t. But there are days when I hate it. I’ve started filling a pitcher of ice water and leaving it on my counter right where I can see it. I call it “my goal” and my kids keep asking me if I’ve met my goal. Some days this actually works!

Yeah, water and I — not such close friends. I drink more in the winter when it’s cold, as hot coffee has perks beyond just hydration (I’ve given in to decaf after the initial morning tankard).

Coming where I came from I am still not used to drinking tap water right out of the faucet. I always need to boil it first even though I do give my kids tap water straight. So I kind of know where you are coming from…
