Weeknight Simple:Cider-Glazed Chicken

I’m pleased to share with you today a recipe featuring chicken that did not run away. This chicken must not be in the Cool Chicken Clique, because he stayed in my refrigerator long enough to gobble him down.

This recipe is perfect for a weeknight: the chicken is a one-pan affair, and the cider glaze is a lovely nod to fall flavors, and you really can get this meal on the table in 30 minutes, if you put the rice on to cook before you begin. Add your favorite veg and you’re good to go.

When I make this again–and I will–I think I’ll double the recipe for the glaze. I like my chicken saucy. Plus, the glaze is delicious when it soaks into the rice. If you have a little extra time or motivation, a bed of mashed potatoes would also work nicely. Since I have a rather marked mashed potato addiction, I erred on the side (backside?) of safety and stuck with rice.

Whatever you decide to serve with it, this dish is something that (if you serve the parsley on the side) even children will consume. Bonus!


Cider-Glazed Chicken

serves 4

1/2 tablespoon butter

1 pound chicken breast cutlets (about 4 cutlets)

1/4 teaspoon salt

1/4 teaspoon freshly ground black pepper

1/2 cup apple cider

1 teaspoon Dijon mustard

2 tablespoons chopped fresh flat-leaf parsley

Melt 1/2 tablespoon butter in a large, non-stick skillet over medium-high heat. Sprinkle chicken with 1/4 teaspoon salt and pepper. Add chicken cutlets to the pan; cook 3 minutes minutes on each side or until done. Remove chicken from skillet. Add cider and mustard to the pan and scrape the browned bits off the bottom with a spoon. Cook 2-3 minutes or until reduced and syrupy. Add chicken back to pan, turning to coat. Add salt and pepper to taste; sprinkle parsley over.

Serve with rice, mashed potatoes or buttered noodles to soak up the sauce.
