We’re suckers for our ethnic food here at Chez T. My personal favorite is Vietnamese cuisine, Awesome Stepkid R. loves Chinese, and my husband has a soft spot for Thai. He also loves sushi but there’s no way I’m attempting that in my kitchen!
Pretty sure that me+sushi=freakshow. Or food poisoning of some kind. I fear the sushi.
But other ethnic cuisines are fair game, particularly Asian. Within the span of a week, I’ll probably make at least two meals with Asian-style flavor, if not more. I guess this is also why I own every condiment known to man. I am Condiment Queen.
I made this healthy, flavorful, Thai-inspired salad for a weekend lunch, alongside some soy-honey glazed salmon. It was a satisfying but light lunch; we still had plenty of energy left for an afternoon walk and some trampoline hi-jinks.
If you like, you can toss some cooked chicken or shrimp on top of the salad and you’ve got an easy, one-bowl meal. More time then for frolicking, right?
Thai Salad with Peanut Dressing
serves 2
from Cooking Light Magazine, May 2009
Dressing:
3 tablespoons water
2 tablespoons rice wine vinegar
1 tablespoon chopped green onions
1 tablespoon reduced-fat peanut butter
1 tablespoon low-sodium soy sauce
1 teaspoon grated peeled fresh ginger
1 teaspoon Sriracha
1 teaspoon dark sesame oil
2 teaspoons dry roasted peanuts
Salad:
2 cups mixed baby salad greens
1/2 cup fresh bean sprouts
2 tablespoons vertically sliced red onion
2 tablespoons fresh mint leaves
2 tablespoons fresh cilantro leaves
6 baby carrots, shredded or peeled
4 cherry tomatoes, quartered
To prepare dressing, combine the first 8 ingredients in a blender; cover and process until smooth. Add peanuts. Process 10 seconds.
To prepare salad, divide greens and remaining ingredients evenly between 2 serving plates. Drizzle each salad with 1/4 cup dressing.

My son has peanut allergy so no peanut dressing for us – but it looks SO GOOD! I miss nuts! I also love vietnamese food. So delish! And Thai. And Chinese. What I don’t like? Korean. And, of course, my MIL is from Korea. ACK!

Thai is my absolute favorite cuisine. If I had to choose one cuisine to dine on forever, it would be Thai. Guess what! I love Thai. I had Vietnamese the first time in May while in Houston. It, too, was delicious! Love all the elements of your salad so will definitely put it on the menu.

Well, TKW, sushi really only revolves around the preparation of the rice itself and technically does not require using raw fish, so I think you should give it a try at least once. :-)
I will admit to having a very, very strong bias towards Italian and Spanish food (viva La Furia Roja!), but for whatever reason I tend to veer away from Asian cuisines, which is unfortunate as everyone I work with goes apeshit over food from there and while it’s perfectly fine, it’s not my first choice when it comes to food. Give me anything that borders the Med and I am a happy, happy camper.
I LOVE Thai food, as does hubby. Unfortunately, my wallet does not… Thank you for giving me a cheap fix!

I actually went to a sushi party once. The concept revolved around making and eating your own sushi. I’ve mentioned before that I don’t eat fish or seafood. So I made the best veggie sushi rolls EVER. You should play around with it — very fun!
We make food of the Asian variety often as well. I think its because it utilizes so many vegetables that when we are trying to cut back on meat, it is the most sensible option!

I am definitely copying this recipe. I know it’s going to taste as good as it looks. I’m on the hunt for salads to take to the beach on weekends. The only change I’ll make is full fat peanut butter. I don’t do reduced fat anything.

I love peanut sauces and dressings! We usually have asian flavors at our house when Joe invents a stir-fry… so about once a week. It’s his favorite!

Love Asian anything. And, just on the subject of sushi, I want to mention that I had my daughter eating sushi at restaurants when she was four! What’s more annoying anyway than kids who will only eat pizza and chicken nuggets?
