Rehydration Smoothie

I have issues with water. It’s just that, well, I don’t really like it. I can’t even complain that we have funky tasting water, like some states; Colorado water is deemed delicious by anyone who’s ever visited my home.  But whenever I drink water, it sorta tastes like what I last ate. That kind of skeebs me out.

I’ve tried adding lime, lemon, cucumber, little packets of Crystal Light. And that does help, but I still don’t drink enough. I like Pellegrino, but it’s carbonated, so if I drink a lot of it, my stomach starts to resemble a half-inflated balloon, which insults my vanity.

The result of this conundrum? I don’t drink enough liquid during the day. At first blush, this doesn’t seem too bad–I’ve always had a small bladder. Mama used to complain that when I was little, she knew the location of every public bathroom in the state of North Dakota. It was exhausting to be the mother of Little Miss Tinkle.

And as far as this bladder goes, let’s face it: giving birth to two humans hasn’t helped matters.

My constant state of dehydration makes my skin flake and my lips dry and my temples throb at times. I wake up during the night often, parched and fumbling for my water glass.

When I saw this recipe, I knew it was good medicine. It’s  delicious, very refreshing and is a great way to start your day if, like me, you wake up feeling like you ate the Gobi Desert.

Plus, the pretty pink color is a cheery sight in the morning, don’t you think?

Rehydration Smoothie

from O Magazine

serves 1

1 cup watermelon chunks, frozen*

1/2 cup coconut water**

1 1/2 teaspoons fresh lime juice, from 1/2 lime

4 to 5 mint leaves

4 ice cubes

Combine ingredients in a blender and process until smooth. Serve immediately.

*A little hint about freezing watermelon chunks. Chunk the melon fairly small, into about 1/2-inch cubes. Also, freeze the cubes flat, in a single layer (not hucked together in a Ziploc bag like I did). Big hunks of frozen watermelon? Hell on your blender. I seriously thought mine was going to go kaput on me.

**Coconut water is not coconut milk or cream of coconut. It’s water that comes from a young coconut, and it’s becoming hugely popular among the gym-going crowd. Apparently, it’s loaded with potassium and electrolytes, making it the perfect thing to jump-start your body. It can be found in health food stores, but actually, it’s becoming such a “thing” that I was actually able to find it in the juice aisle (near the organic juices) at my neighborhood Kroeger.
